1 tbsp additional virgin olive oil
1 small yellow onion, diced
Three cloves garlic, minced
1 jalapeno, diced
2 medium sized zucchinis, julienned
1 tsp dried oregano
1 tsp cumin
Freshly floor pepper, to style
2 cups contemporary child spinach leaves, tightly packed
Three–Four free-range eggs

Preheat oven to 375 levels.
Warmth olive oil in an oven-safe skillet over medium warmth.
Add onion and sauté for 5-7 minutes till tender. Add the garlic and jalapeno and sauté for an extra Three minutes.
Stir within the zucchini, oregano, and cumin. Season with black pepper to style.
As soon as the zucchini is tender, stir within the spinach and proceed cooking for an extra 1-2 minutes.
Scrape down the perimeters of the pan and pat down all cooked elements so the combination is evenly distributed.
Make Three-Four small wells within the cooked combination and crack an egg into every.
Switch the skillet to the oven. Bake for 7-10 minutes, or till the eggs are set.
Serve instantly.
