Spring Rooster Paleo Fashion

four rooster quarters

2 tsp herbs d’ Provence
four cloves of garlic, minced
zest from 2 lemons
Veggies:
2 small zucchinis
eight ounces cremini mushrooms, cleaned
1-pound asparagus
1 recent lemon quartered

Directions
Preheat the oven to 425ºF.
Warmth a skillet over medium-high warmth, pour in olive oil to evenly coat and add the rooster thighs. Sear either side of rooster to a caramelized brown.
